Instructions
  1. Put the flour and butter into a large bowl.
  2. Rub the flour and butter together till it resembles breadcrumbs, using a fork or your fingers.
  3. Then mix in the granulated sugar.
  4. In a separate bowl, whisk together the water and egg.
  5. Quickly combine the dry and wet mixtures (I used an electric hand whisk). The consistency will be slightly sticky and wet.
  6. Wrap the pastry in film and rest it for at least 30 minutes.
  7. Preheat the oven to 200 C / 180 C Fan / Gas 6.
  8. In a new large bowl, mix together the golden caster sugar, cinnamon and cornflour.
  9. Peel the apples and pat with kitchen paper (Bramley apples have more moisture than needed for the pie).
  10. Chop the apples into strips, then cut the strips into thirds (halves may be too big but up to you).
  11. Add the apples to the sugar mixture and toss well, trying to cover all apples.
  12. After 30 minutes has passed since resting the pastry, halve the the dough into two balls and roll each out between two pieces of cling film (using extra flour here may have the pastry too dry and too hard when baked so try not to).
  13. Line a 23cm (9 in) pie dish (widest diameter measured) with one of the pastry rounds, then add the apple mixture.
  14. Cover all this with the second piece of pastry. Trim and seal the edges, then cut air slits on the top lid in your own design.
  15. To make sure a nice golden colour is acheived, brush over some milk on the top of the pie.
  16. Bake the pie for 30 minutes, or until the pastry is golden brown. Remove from oven and let cool for 15 minutes before slicing and serving.

Instructions
  1. Preheat oven to 190 C / Gas mark 5. Lightly grease a baking dish.
  2. Butter one side of every piece of bread, then cut slices into triangles.
  3. Place half of the bread buttered side up covering the base of the baking dish.
  4. Sprinkle sultanas and sugar onto bread,
  5. then place the remaining bread on top buttered side up.
  6. In a saucepan over medium heat, warm milk until nearly boiling.
  7. Remove from heat and combine with eggs, stirring vigorously.
  8. Pour the mixture over the bread and allow to soak for ten minutes.
  9. Grate nutmeg over the top.
  10. Bake in the middle of the oven for 45 minutes until set and lightly browned.

For hot toffee sauce

  1. Chop dates finely and soak in tea for 15 minutes.
  2. Preheat oven to 180 C / Gas 4. Prepare and line a 20cm (8 in) round cake tin.
  3. Cream butter and caster sugar until light and fluffy.
  4. Beat in the eggs one by one.
  5. Sift in the flour and baking powder and fold into the mixture.
  6. Add bicarbonate of soda, vanilla and espresso to the dates and tea.
  7. Combine both mixtures to produce a loose soft dropping consistency.
  8. Turn into the prepared tin and cook for 1 to 1 1/2 hours, or until skewer comes out clean.
To make the toffee sauce:
  1. Put the butter, sugars and golden syrup into a heavy based saucepan and melt gently on a low heat.
  2. Simmer for 5 minutes.
  3. Remove from heat and gradually stir in the cream and vanilla extract. Return to heat and stir for 2 to 3 minutes until sauce is smooth.
  4. Pour a little sauce onto a serving dish.
  5. Place a portion of the pudding on top and pour over more sauce.
  6. Pour remaining sauce into a jug to serve, along with softly whipped cream.

  1. Heat oven to 180 C / Gas 4.
  2. Break the chocolate into squares and melt it with the butter in a bowl over a saucepan of hot water.
  3. Take off the heat and leave to cool.
  4. Whisk the egg, egg yolk and sugar with an electric mixer until well mixed.
  5. Butter 2 ramekins, about 75mm in diameter. Dust well with the cocoa powder, then shake off any excess.
  6. Whisk the cooled chocolate mixture into the eggs and sugar mixture.
  7. Sift the flour over the mixture, then fold in.
  8. Divide between the 2 ramekins.
  9. Bake for 15 minutes in the preheated oven.
  10. Run a knife around the edge of each cake and turn out onto plates.
Recipe Notes

Tips

When taking the cakes out of the oven, expect the cakes to still appear a little bit wet on the top and be a bit wobbly. So take care when running the knife around the edge of the cakes.

There will be quite a lot of the melted part in the middle. If you'd prefer more cake and less sauce in the middle, cook for an extra 2 to 3 minutes.

  1. Add all the dry ingredients, dried fruit, spice and butter into a bowl then mix together well.
  2. Add the milk and combine to form a soft dough.
  3. Place the mixture into a buttered pudding bowl of about 1 litre capacity then cover with foil.
  4. Bring a large saucepan of water to the boil then place a saucer in upside down to keep the pudding bowl off the bottom.
  5. Lower the pudding in and leave it to boil for 2 hours adding additional water as it evaporates.
  6. When cooked put the pudding onto a plate and serve with custard.

Instructions
  1. Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment.
  2. In a large bowl, mix together flour, baking powder, salt and sugar.
  3. Stir in suet and enough water to create a soft, but not sticky dough.
  4. On a floured surface, roll dough into a 20x30cm rectangle. Brush with jam, leaving a 1-2cm border all around.
  5. Brush the border with egg wash. Roll the dough into a loose roll, starting at the short side. Pinch the ends to seal.
  6. Transfer to prepared baking tray seam side down. Brush with egg wash and sprinkle with sugar.
  7. Bake in preheated oven for 35-40 minutes or until golden and cooked through. Serve hot with fresh custard.
