Instructions
  1. Preheat oven to 190 C / Gas mark 5. Lightly grease a baking dish.
  2. Butter one side of every piece of bread, then cut slices into triangles.
  3. Place half of the bread buttered side up covering the base of the baking dish.
  4. Sprinkle sultanas and sugar onto bread,
  5. then place the remaining bread on top buttered side up.
  6. In a saucepan over medium heat, warm milk until nearly boiling.
  7. Remove from heat and combine with eggs, stirring vigorously.
  8. Pour the mixture over the bread and allow to soak for ten minutes.
  9. Grate nutmeg over the top.
  10. Bake in the middle of the oven for 45 minutes until set and lightly browned.

  1. pre heat oven to gas mark 5 / 190c
  2. beat sugar, eggs, vanila, milk and oil together
  3. add flour, bicarb and baking powder
  4. when mixed propperly put into paper cases
  5. bake at 190 C / Gas mark 5 for 25 minutes.

Instructions
  1. Preheat the oven to 190 C / Gas 5. Grease and line 2 (18cm) sandwich pans.
  2. Put all ingredients into a bowl and whisk with an electric whisk for 2 minutes.
  3. Divide the mix between the two tins.
  4. Bake for 25 minutes.
  5. Turn out onto a wire rack to cool, then sandwich together with jam and / or buttercream.

  1. Combine the milk and vanilla extract; bring to the boil.
  2. Beat egg yolks and icing sugar until light and fluffy.
  3. Stir in the cornflour.
  4. Gradually pour in hot milk, stirring constantly.
  5. In a double boiler, cook the mixture over medium high heat for 2-4 minutes, stirring constantly.
  6. Reduce heat and whisk the mixture for few more minutes.
  7. Set aside to cool before using as required.

Instructions
  1. Add all the dry ingredients, dried fruit, spice and butter into a bowl then mix together well.
  2. Add the milk and combine to form a soft dough.
  3. Place the mixture into a buttered pudding bowl of about 1 litre capacity then cover with foil.
  4. Bring a large saucepan of water to the boil then place a saucer in upside down to keep the pudding bowl off the bottom.
  5. Lower the pudding in and leave it to boil for 2 hours adding additional water as it evaporates.
  6. When cooked put the pudding onto a plate and serve with custard.

  1. Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment.
  2. In a large bowl, mix together flour, baking powder, salt and sugar.
  3. Stir in suet and enough water to create a soft, but not sticky dough.
  4. On a floured surface, roll dough into a 20x30cm rectangle. Brush with jam, leaving a 1-2cm border all around.
  5. Brush the border with egg wash. Roll the dough into a loose roll, starting at the short side. Pinch the ends to seal.
  6. Transfer to prepared baking tray seam side down. Brush with egg wash and sprinkle with sugar.
  7. Bake in preheated oven for 35-40 minutes or until golden and cooked through. Serve hot with fresh custard.

  1. Rub the butter into the flour until it looks like fine breadcrumbs, add sugar and dried fruit and mixed spice, if using
  2. Add egg and milk to make a soft dropping consistency.
  3. Put into lined 2 lb loaf tin or 6" round cake tin. Sprinkle demerara sugar over the top and pat down with the back of a spoon (this gives a nice crunchy top) and bake for approximately 1 to 1 1/4 hours in a preheated oven at 180 C / 160 C fan / Gas 4 until a skewer comes out clean.
